[This is the third and final part of a series on how restaurants and hotels are expanding into takeaway and home delivery and also into outside catering… this time I want to focus on outside catering.]
GROWING THROUGH OUTSIDE CATERING…
In my last blog (‘Lessons In Business Innovation & Growth‘) I discussed when restaurants and hotels start getting more and more popular; it’s natural for owners and management to start thinking of options for expansion.
We discussed the innovative new ways some of our customers have grown their business such as ‘pop-up kitchens’, food trucks and app-driven home-delivery, led by new ‘disruptor’ businesses like Deliveroo and Just Eat.
Alongside the exciting opportunities restaurants and hotels are taking to grow through pop-ups and delivery, there are some who are expanding their services into catering (known as ‘outdoor catering’ or ‘off-site catering’).
Many restaurants and hotels are already successfully growing their brand, reputation and turnover by offering outdoor catering… whether focusing on particular types of event, such as catering for weddings, or offering catering for a broad range of requirements, from office meetings to celebrations to special dinners in different venues and marquees etc.
Also many of our smaller restaurants and cafes customers are offering very individualised services on quieter days or evenings when they are normally closed, such as providing chefs who visit a customer’s private house to cook for them and their guests.
It’s not just catering companies and entrepreneurial restaurants and hotels that are benefiting from providing outside catering alongside their ‘bricks and mortar’ operation, pubs and cafes are operating off-site too.
One of my colleagues was recently at a business meeting where sandwiches and cakes were delivered by a local cafe which is having considerable success with event catering, supplementing its high street trade with catering for tea parties and hen parties, Christenings, Weddings and business meetings etc.
This is a great example of ‘drop-off’ catering whereby the food is all prepared in-house, with little extra staff training or additional equipment or logistics needed, and the order is either dropped-off or the customer picks it up… even the fast food restaurants are now encroaching on this sector with the rise of app-driven delivery.
The next stage beyond ‘drop-off’ catering is a more evolved plated or buffet-style event catering, whereby the restaurant or hotel provide an extension of their own menu or perhaps a special catering menu, with the food provided on-site by the restaurant’s own staff, usually with all the plates, utensils etc supplied too.
This could be done with mostly chilled food re-heated on-site using chafing dishes over sternos, a small kitchen on-site at the venue or even a mobile kitchen or food van parked nearby.
We recently visited the Sheesh Mahal Bangladeshi restaurant in Twickenham UK, one of our oldest customers, to shoot some video about how they use our ‘Petit Chocolate’ range personalised with their restaurant’s name, locaton and contact details, website, Social Media, outside catering details, special offers etc.
When we arrived at the Sheesh Mahal to meet the son of the owner, Mr Monaf, he told us how he had just been to a venue to set-up bain-maries ready for a Wedding the next day. Mr Monaf explained how his kitchen would be preparing delicious Bangladeshi food for the celebration, with staff taking it to the venue to serve it.
Just as the Sheesh Mahal uses our Petit Chocolate mini-bars to promote their restaurant and outdoor catering service, so other customers large and small are benefiting from using the ‘edible advertising’ opportunity offered by personalised chocolates and confectionery to promote their outside catering business.
